  • 2 cups red onion (loosely packed roughly chopped, or 1 cup each of brown and red onions)
  • 1 1/2 cups capsicum (chopped green)
  • 6 cloves garlic (crushed)
  • 2 cups fresh tomatoes (diced, with their juices)
  • 1 cup white wine (optional - add additional fish stock if not using)
  • 1 liter fish stock
  • 2 tablespoons Hungarian sweet paprika
  • 2 pinches smoked paprika (optional)
  • 2 medium potatoes (cubed)
  • 1.5 kilograms perch (whole, about 2 fish, or similar firm-fleshed white fish, filleted, bones and heads reserved, ask your fishmonger to do this for you, cut into large 3 - 4 cm pieces)
