Description
A fish lover's delight, this recipe is quick and easy. The fish is moist and tender, almost melting in your mouth. The aromatic vegetables will fill the air with delicious smells, heightening your anticipation. The presentation will bring you praise.
Ingredients

- vegetable oil
- 1 onion (peeled and sliced)
- 1 garlic clove (peeled and minced)
- 250 grams porcini mushrooms (sliced)
- 5 ounces white wine
- 8 ounces chicken stock
- 4 fish steaks (thick hake, or pollock or cod)
- salt
- ground black pepper
Directions
- Saute together the onion and garlic in a tablespoon of oil until transparent. Add the mushrooms.
- Cook for 4 to 6 minutes. Add the white wine and simmer until the alcohol has evaporated. Then, add the chicken stock and simmer 10 minutes on low heat.
- Salt and pepper the fish and add it to the same skillet.
- Cover and let simmer on low heat. When you see that the tops of the fish are cooked, remove the lid and serve.

There was no hake fish at my supermarket. You can use either pollack or cod to replace that type. They have similar tastes. When you sauté the fish in the chicken stock, it just absorbs so much juice and flavor. I did add a pinch of onion powder and a bit of seasoned salt to the mixture. It’s a really easy recipe that is so good for you.
