Ingredients

  • beef brisket (Corned, 4lbs)
  • 6 red skinned potatoes (Medium Sized)
  • 1 cup brown sugar
  • 1 head cabbage
  • 10 carrots
  • 1 onion (Large)
  • 12 ounces stout (Bottle Guinness)

Directions

  1. Cut potatoes into 2-in Cubes. Slice carrots and onions, and set aside.
  2. Place corned beef brisket into crockpot. Add carrots, onions, and potatoes on top of and around brisket.
  3. Pour Guinness over brisket and vegetables. Add spice packet from brisket and brown sugar. Stir until spice and sugar are mixed with stout. Cover.
  4. Cook on medium-low setting until brisket is falling apart and vegetables are tender.
