Description

A traditional Mexican dessert, Jericalla Custard is a relatively easy custard to make. This recipe for Jericalla Custard is inspired by the Guadalajara version. Flavored with cinnamon and vanilla, the custard ingredients are combined over heat and then poured into flan molds or individual ramekins and cooked in a water bath until golden. Creamy and light in texture, the rich caramelized flavors of this Guadalajara-style Jericalla Custard are the perfect sweet note to end your night on.

Ingredients

water
1 liter raw milk
1 cup sugar
1 cinnamon sticks
1/2 teaspoon vanilla
6 large egg yolks

Directions

1Preheat the oven to 180 degrees Celsius.
2In a heavy-bottomed pan, add a drizzle of water over medium heat.
3Then add the milk, sugar, cinnamon, and vanilla while stirring constantly with a wooden spoon.
4Place the egg yolks in a bowl. Have a whisk handy.
5Once the milk boils, add a drizzle of hot milk to the egg yolks. Beat vigorously. Repeat 4 times.
6Add the yolks to the milk and sugar while stirring.
7Turn off the heat.
8Pour into individual flan molds.
9Place the flan molds in a baking pan and add plenty of water to the baking pan.
10Bake on the middle rack of the oven for 45 minutes until golden.
11Place on the top rack of the oven and raise the heat until the surface browns.
