Ingredients

  • 2 avocados (halved, pitted)
  • 4 1/2 ounces corn kernels (canned, drained)
  • 1 tomato (seeded, finely chopped)
  • 2 spring onions (thinly sliced)
  • 1/2 lemon (juiced)
  • 1 carrot (peeled, cut into sticks)
  • 2 stalks celery (trimmed, cut into sticks)
  • 1 red pepper (seeded, cut into sticks)
  • 2 persian cucumbers (seeded, cut into sticks)

Directions

  1. Mash avocado flesh. Mix in corn, tomato, onions and lemon juice. Season.
  2. Serve with crudités.
