Ingredients

1 avocado
1/2 cup tomatoes (chopped)
2 tablespoons onions (chopped)
1/2 cup soft cheese (such as farmer's or cotija cheese)
lemon zest (from 1 lemon)
3 eggs
1/4 cup olive oil
1/2 cup flour (+ 2 tablespoons)
1/2 tablespoon baking powder
1/2 teaspoon dried oregano (ground)
1/4 teaspoon garlic powder
3 tablespoons coriander (minced)

Directions

1Preheat oven to 350 degrees Fahrenheit.
2Mix the tomato, onion, cheese, lemon zest, and avocado together.
3Whisk the 3 eggs together until bubbles begin to form, then add the olive oil, and mix them together completely.
4Mix the flour, baking powder, oregano, and garlic powder together. Add this mixture to the eggs along with the coriander.
5Finally, add the tomato mixture to the flour mixture. Stir the ingredients together and mix well. Pour the batter into a lightly oiled muffin pan.
6Bake the muffins for 15 to 20 minutes minutes. Serve warm.
