  • 30 empanada wrappers (Loty, for baking, I prefer these over Goya brand, but whatever you use, just make sure they're supposed to be baked not fried)
  • 3/4 pound lean ground turkey
  • 1 onion (medium, diced)
  • 1 clove garlic (minced)
  • 15 ounces diced tomatoes (with lime and cilantro)
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 1/2 cups potatoes (diced and boiled until tender)
  • 10 green olives (sliced)
  • 1 1/4 cups black beans (rinsed)
  • 2 hard boiled eggs (diced)
  • 1 teaspoon garlic salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika

Taste really good even though I skipped the eggs and beans. Felt like it would have been too much for the small empanadas I bought. Don’t forget to buy olive oil that’s not listed as an ingredient, wet your hands when you’re folding and crimping as it helps and find a dipping sauce as they are a bit dry. Very tasty though. Will make again!
