    This was great! Used fresh herbs from the garden instead of dried and added red & yellow peppers, a few chopped mushrooms, fresh green beans from the garden, & carrots. 1/2 the recipe since there’s only 3 of us. But everyone agreed that this one is a keeper. Might try it vegan next time by adding beans, lentils, & omitting cheese....

    The proportions were a little off. This made a heaping 9 x 13 pan. If I make it again I will use less quinoa. Otherwise it was an alright meal.

    This is one of the first meals I've ever followed along with in my life and it came out great. Delicious, filling and simple to follow for a beginner (me)!

    Festive and fun! Added some jalapeño peppers and corn. It looked dry upon taking it out of the oven, but after sprinkling fresh cut tomatoes, peppers, and scallions over top it was not dry at all! Excited to eat left overs tomorrow!
