  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 red bell pepper
  • 1 bell pepper (orange or yellow)
  • 1/2 cup cashews
  • 1/2 cup shredded Parmesan
  • 1 pinch chili flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup ricotta cheese
  • 1/2 cup tomatoes
  • 1/4 cup 2% milk
  • 16 ounces pasta (your choice, spaghetti or angel hair work great for this!)

    Directions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. Prep the pasta according to the package while you start the rest of the meal.
    3. In a mixing bowl combine the ground turkey, egg, breadcrumbs, garlic, salt and pepper. Mix well and form into meatballs using a 2 tbsp cookie scoop.
