- In a large, non-stick skillet, cook pork, 3/4 cup onion, 1/4 tsp salt and 1/4 tsp pepper on medium high until pork is no longer pink, stirring often to break up the pork. Add 1 clove garlic and 1 tsp ginger; cook for 1 minute. Add 2 Tbs soy sauce, 1 Tbs vinegar, 1 Tbs oil, 1 Tbs peanut butter, 1 Tbs water and 1/2 tsp hot chili sauce. Stir to combine. Add 1/4 cup green onions and 4 oz water chestnuts into the skillet then cook for 1 to 2 minutes until the onions are soft and the water chestnuts are heated through.
- Asian Drizzling Sauce: In a small bowl, combine ingredients (3 Tbs soy sauce, 2 Tbs rice vinegar, 2 Tbs honey, 1 Tbs Dijon, 1/2 tsp Sriracha, 1/2 tsp toasted sesame oil) until smooth. Drizzle over lettuce wraps.Makes enough for about 12 to 16 lettuce wraps or 4 servings.
- To serve: Spoon warm pork mixture into lettuce leaf; top with carrots, bean sprouts and cilantro. Drizzle with Asian Drizzling Sauce. Wrap/roll up, eat and enjoy.
