Delicious and easy. I didn't have corn but it was still great. Definitely will make this again! Does not work well with gluten free tortillas.

I made this with just a couple of changes. No corn and added some cilantro and cumin. I really thought it would be missing tomatoes. It seemed odd not to have them. But they were not missed at all. We threw some salsa and more sour cream on top of the melted cheese and WHAM! Tasty Mexican. Very nice recipe. Different from the other dishes I make. A real keeper!👍
