Ingredients

  • 2 corn-on-the-cob (fresh, shucked and cut into 1/2 inch thick slices)
  • 2 tablespoons oil
  • 1 pound ground beef
  • 1 1/4 cups vegetable stock
  • 14 ounces diced tomatoes
  • 15 ounces butter beans (drained)
  • 1/2 cup tomato salsa
  • 4 green onions (sliced)

Directions

  1. Cook the corn in boiling salted water for 10 mins. Drain.
  2. Heat the oil in a large skillet on medium-high heat. Add the ground beef and cook for 5-6 mins until browned. Season with salt and black pepper. Add the corn, stock, tomatoes, beans, salsa and green onions. Bring to a boil. Reduce heat to low and simmer for 10 mins, stirring occasionally. Serve with bread, if desired..
