Description

It's burrito night! This one pan dish with ground beef, black beans, bacon, corn, and more makes a great filling for a tasty burrito. Serve with some rice and your favorite tortillas and you will have a dinner that is sure to be a family favorite.

Ingredients

olive oil (to taste)
1/2 piece bacon (diced)
1/2 onions (chopped)
3 garlic cloves (chopped)
1/2 red bell pepper (chopped)
1 tomatoes (ripe, chopped)
500 grams ground beef
850 grams black beans
4 tablespoons frozen corn
salt (to taste)
100 grams mozzarella cheese

Directions

1Heat a skillet with little olive oil, and add the diced bacon. When the bacon begins to brown, add the onion and garlic cloves. Cook until onion is translucent.
2Add peppers and tomatoes. When the mixture starts to boil, add the meat, cover, and cook for 10 minutes, stirring occasionally. If necessary add a bit of the bean water.
3After 10 minutes, add the undrained corn, and the undrained beans, and cook for another 10 minutes, stirring once or twice. Check the seasoning.
4Just before removing from heat, stir in the mozzarella cheese.
5Serve immediately with white rice, and tortillas.
