It's burrito night! This one pan dish with ground beef, black beans, bacon, corn, and more makes a great filling for a tasty burrito. Serve with some rice and your favorite tortillas and you will have a dinner that is sure to be a family favorite.

Ingredients

  • olive oil (to taste)
  • 1/2 piece bacon (diced)
  • 1/2 onion (chopped)
  • 3 garlic cloves (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 tomato (ripe, chopped)
  • 500 grams ground beef
  • 850 grams black beans
  • 4 tablespoons frozen corn
  • salt (to taste)
  • 100 grams mozzarella cheese

Directions

  1. Heat a skillet with little olive oil, and add the diced bacon. When the bacon begins to brown, add the onion and garlic cloves. Cook until onion is translucent.
  2. Add peppers and tomatoes. When the mixture starts to boil, add the meat, cover, and cook for 10 minutes, stirring occasionally. If necessary add a bit of the bean water.
  3. After 10 minutes, add the undrained corn, and the undrained beans, and cook for another 10 minutes, stirring once or twice. Check the seasoning.
  4. Just before removing from heat, stir in the mozzarella cheese.
  5. Serve immediately with white rice, and tortillas.

Loved this dish. Enjoyed making it and enjoyed eating it even more. The flavors are amazing. The corn adds in something extra with a little crunch to break up the ground beef and bean consistencies. Definitely restaurant quality. Very delicious and packed with flavor.
