Super fast and easy! I didn’t have zucchini or red bell pepper so I added mushrooms and green bell pepper. I also used tomato sauce instead of paste, which cut the carbs down. I think this would be good with any veggies you have on hand. Great for a quick meal on a week night!

I tweaked it a little by leaving out the tomato due to allergies and added in more Dijon mustard and red pepper flakes and we devoured the entire thing, so much for leftovers.

It turned out great. My husband liked it very much. He is so picky when it comes to dinner.
