Description

Salt, sweet, tang, zest--this minced meat salad has it all. Made with ground beef, beans, and vegetables this salad makes a great soft taco filling or a main dish accompanied by rice. Gluten free.

Ingredients

white rice (cooked)
500 grams ground beef
3 garlic cloves
1 teaspoon paprika
1 onions (medium)
3 tomatoes (medium)
1 can black-eyed peas
black olives (to taste)
olive oil (to taste)

Directions

1Cook the rice. When cooked, rinse in cold water so it remains fluffy and cool.
2In a skillet, fry the garlic cloves in drizzle of olive oil, on medium heat.
3Before the garlic browns, add the meat, separating well with a fork, season with salt and paprika and let cook. When the meat is cooked, remove from heat, and let cool.
4While the meat and the rice cool down, chop the onions and tomatoes in small pieces, and place in a large bowl.
5Add the olives.
6Add the cold rice and meat, and mix in the bowl.
7Drizzle with a bit of olive oil and serve.
