  • 2 cups cooked rice
  • 1 pound ground beef ({I used Zaycon ground beef})
  • 1/2 cup chopped onion
  • 1/4 cup red bell pepper (or chopped green)
  • 15 ounces black beans (drained and rinsed)
  • 8 ounces tomato sauce
  • 1 cup corn ({I used frozen})
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 2 tablespoons chopped cilantro (fresh)
  • 1 cup cheese (shredded {cheddar or Monterey jack work best, but use whatever you have on hand})

perfect as a dip for tortilla chips. loved it!
Super easy and convenient meal for a busy family life! It gave us two nights worth of dinner, and breakfast and lunch for me on the third day. Time very well invested when making this. The following days were a breeze, not having to think about dinner. Loved the combo. We spiced it up to our taste. Highly recommended.

good, used pintos rather than black beans and chicken over beef... even added a small amount of finely chopped carrots and some spinach

My family really liked this! I made some modifications based on what I had on hand but I think that's one of the good things about this recipe-it's so easily modified!

Very good. It's a cheap meal, my kids loved it. It makes for good leftovers and it's easy to make. Doesn't get much better than that

Super easy and a kid pleaser! We will add it to our monthly meal plan! On occasion I have just used taco seasoning instead of the chili powder and garlic powder, works well.
