Ingredients

  • 2 tomatoes
  • 2 orange
  • 2/3 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon hot pepper sauce
  • 1 1/4 pounds salmon fillets (about 4 fillets)
  • 20 sprays I Can't Believe It's Not Butter!® Spray Original

Directions

  1. Combine oranges, tomatoes, green onions, cilantro and hot pepper sauce in large bowl. Season, if desired, with salt and ground black pepper; set aside.
  2. Spray salmon with I Can't Believe It's Not Butter!® Spray Original and sprinkle, if desired, with salt and pepper to taste. Grill or broil salmon, turning once, 10 minutes or until salmon is opaque. Serve salsa with salmon.

Great! Seared the salmon and then broiled. The salsa we modified and used mandarins and sriracha along with yellow onion and cilantro in addition to the other ingredients minus the pepper we sauce.

This was an awesome dish. Wasn't sure about the oranges and tomatoes together, but it was really good. My wife and I had it for our last meal in 2015.
