Ingredients

  • 4 portobello mushrooms (large, get the biggest ones you can find)
  • 12 ounces hot Italian sausage (or mild, use turkey Italian sausage for South Beach Diet)
  • 2 tablespoons olive oil (for browning sausage and onions and brushing on mushrooms before grilling)
  • 1 onion (small, finely chopped)
  • 1 teaspoon garlic (minced fresh, or use chopped garlic from a jar)
  • 1/2 cup tomato sauce (I used garden tomato sauce from my freezer. If you open a can, just freeze the rest.)
  • 1 pinch red pepper flakes (optional)
  • 8 ounces spinach leaves (coarsely chopped)
  • 2 tablespoons fresh basil (chopped, probably optional, but recommended)
  • 2 tablespoons fresh parsley (chopped, probably optional, but recommended)
  • 1/2 cup mozzarella (grated, plus 1/2 cup for sprinkling on top, I used low-fat mozzarella)

Amazing my husband loved it and says it’s a keeper. I did adjust my to be a vegetarian style and I loved it.
Delicious! Definitely making this again.

Delicious! I replaced mozzarella with the fresh version of it and added some chilli flakes.
