Ingredients

  • vegetable oil
  • 1 zucchini (sliced)
  • 1 eggplant (sliced)
  • 1 bell pepper (seeded and cut into strips)
  • 1 onion (peeled and sliced)
  • cheese slices (Emmental)

Directions

  1. Saute the zucchini, eggplant, bell pepper, and onion with 2 tablespoons of oil for about five minutes.
  2. Turn on the oven's broiler on high.
  3. Place the vegetables on a baking sheet and cover them with cheese. Broil until the cheese has melted.

Grilled vegetables have always been a desired dish at my house, however, this recipe blew all my other ones out of the water. The vegetables were cooked to absolute perfection and with Adding in the emmental cheese to out grilled vegetables gave it an entirely new taste. I love this 5 star recipe and am making it again tonight.
