Description

How to take grilled vegetables up a notch? First saute them, then spread out on a broiler pan, top with ample cheese, and broil until cheese is melted and charred in spots. (Note: When broiling foods, always watch them closely to prevent scorching.) This recipe features the classic assortment of zucchini, onion, eggplant, and bell pepper, but practically any vegetable would work here. Emmental cheese is an excellent melting cheese; others to try include gruyere, Monterey Jack, and mozzarella.

Ingredients

  • vegetable oil
  • 1 zucchini (sliced)
  • 1 eggplant (sliced)
  • 1 bell pepper (seeded and cut into strips)
  • 1 onions (peeled and sliced)
  • cheese slices (Emmental)

Directions

  1. Saute the zucchini, eggplant, bell pepper, and onion with 2 tablespoons of oil for about five minutes.
  2. Turn on the oven's broiler on high.
  3. Place the vegetables on a baking sheet and cover them with cheese. Broil until the cheese has melted.
