Ingredients

  • 2 flour tortillas (large)
  • 1 zucchini (julienned)
  • 1 green bell pepper (julienned)
  • 1 carrot (julienned)
  • 4 scallions (cut in half horizontally)
  • cheese
  • 100 grams mozzarella
  • marinara sauce (Prepared)
  • cooking spray

Directions

  1. Spritz the grill with cooking spray and grill the vegetables until tender.
  2. Heat the tortillas and spread with a thin layer of sauce. Top with vegetables and sprinkle with cheese
  3. Place the pizzas back on the grill and cover with tin foil until the cheese is melted and the tortillas are golden brown on the bottom.

The secret to making these pizzas work, is slicing the vegetables very fine and grilling the tortillas for a couple minutes prior to adding your sauce or toppings. Don’t get too close to the edges or you will end up with a mess. This is a fantastic low calorie option when you are craving pizza and making it on the grill adds to the flavor overall.
