  • 1/3 cup lemon juice (freshly squeezed)
  • 1/3 cup olive oil
  • 1 teaspoon grated lemon zest (approximately zest of 1 lemon)
  • 1/2 teaspoon cumin (+ more to sprinkle on just before grilling)
  • 1/2 teaspoon cardamom (+ more to sprinkle on just before grilling)
  • 1/2 cup cilantro (minced)
  • 1/2 cup parsley (minced flat leaf, Italian)
  • 1/2 cup sweet onion (minced, Vidalia or similar)
  • 2 cloves garlic (either mashed or finely minced)
  • 1/4 teaspoon sea salt (or kosher)
  • freshly ground pepper
  • 2 bell peppers (cut into pieces about 1-inch square, I used ½ each of red, green, yellow and orange peppers)
  • 1 sweet onion (cut into crescent shapes)
  • 1 yellow squash (cut in half and each half into half-circles about ½-inch thick)
  • 1 zucchini (if fat cut same way as yellow squash or if smaller, cut into circles about ½-inch thick)
  • 10 cherry tomatoes
  • 10 portobello mushrooms (or small white, stems removed)
  • 1/2 pound fingerling potatoes (or small gold or red potatoes cut into 1-2 inch pieces and parboiled, Put potatoes in a saucepan of cold water, bring to a boil and boil for a few minutes just until a fork can pierce them.)
