Ingredients

500 grams flour
100 grams olive oil
12 grams fresh yeast
10 grams salt
240 grams water
oregano
fire roasted peppers
fire roasted eggplant
2 loin (good pieces unsalted cod)
kalamata
salt (flakes)

Directions

1Mix flour, olive oil, fresh yeast, salt, water, and oregano and knead for about 10 minutes.
2The dough is very manageable due to the oil.
3Cover with a cotton cloth and let rise until doubled in volume.
4Preheat oven to 200°C (approximately 400°F).
5Divide dough in half and roll out two rectangles.
6Bake for 35 minutes.
7Remove from oven and let cool.
8Cover with strips of grilled pepper and eggplant.
9Add cod flakes.
10Top with some olives and salt flakes.
11If desired, drizzle with a little spicy olive oil.
