  • 5 pounds skirt steak (or flank)
  • 2 cups coffee (strong, at room temperature)
  • 2 cups soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup white vinegar
  • 1 white onion (large, diced)
  • kosher salt
  • fresh ground black pepper

    Directions

    1. Using a fork, pierce the steak on one side and place it in a large nonreactive pan or dish, such as a ceramic casserole dish.
    2. In a small bowl, add all remaining ingredients together; stir to combine and pour mixture over steak.
    3. Marinate steak in the mixture for 6-8 hours in refrigerator, turning occasionally. Remove the steak from refrigerator and allow it to rest at room temperature for an hour before grilling.
