Grilled Shrimp with Spicy Mayonnaise

Ingredients

  • 1 pound shrimp (peeled)
  • 1 tablespoon olive oil
  • 2 long green chiles (seeds removed, finely sliced)
  • 1 clove garlic (crushed)
  • lime wedges (to serve)
  • 2 large egg yolks
  • 1 tablespoon dijon mustard
  • 1 tablespoon white wine vinegar
  • 1/2 cup light olive oil
  • 1/2 teaspoon old bay seasoning

Directions

  1. In a medium bowl, combine shrimp, oil, chiles, and garlic. Season to taste and marinate for at least 30 minutes.
  2. Heat an outdoor grill or grill pan to high. Grill shrimp for 1–2 minutes on each side until cooked through. Serve with lime wedges and spicy mayonnaise.
  3. For the spicy mayonnaise: In a food processor, combine egg yolks, mustard, and vinegar. Pulse to combine. With motor running, add oil in a thin, steady stream, until thick and creamy. Season to taste with Old Bay.
