Ingredients

  • 2 tablespoons fish sauce
  • 3 teaspoons palm sugar (finely grated, or packed brown sugar)
  • 1 tablespoon lime juice
  • 1 red chili (long, finely chopped, seeds removed, if desired)
  • 1/4 head red cabbage (finely sliced)
  • 1 carrot (peeled, julienned or grated)
  • 4 spring onions (sliced)
  • 6 baby radishes (finely sliced)
  • 1/2 bunch mint leaves
  • 28 ounces salmon steaks
  • 3 teaspoons olive oil
  • cracked black pepper
  • sea salt

Directions

  1. Preheat grill to medium-high heat.
  2. Place fish sauce, sugar, and lime juice in mixing bowl; stir until sugar dissolves. Add chili, cabbage, carrots, spring onions, radish and mint leaves. Toss well to combine.
  3. Drizzle salmon with oil; season with salt and pepper. Cook for 3–4 mins each side for medium. To serve, place salmon cutlets on plates with a generous portion of slaw.
