  • 2 teaspoons lime zest
  • 20 ounces salmon fillets
  • 5 ounces green beans (trimmed, coarsely chopped)
  • 4 ounces frozen peas
  • 2 tablespoons fresh mint leaves (finely chopped)
  • 1/2 cup buttermilk
  • 1 tablespoon lime juice

Directions

  1. Preheat grill.
  2. Rub lime zest over salmon fillets. Grill for 5-7 mins, or until cooked to your liking.
  3. Meanwhile, cook green beans and peas, separately, until tender. Combine green beans, peas and 1 tbsp mint. Season and set aside.
  4. Whisk together buttermilk, lime juice and remaining mint. Season and set aside.
  5. Serve bean mixture topped with fish. Drizzle with buttermilk dressing.
