Grilled Romaine with Miso Butter

  • 2 heads romaine (cut in half horizontally)
  • olive oil
  • 1/4 cup chopped peanuts
  • lemon zest
  • 3 tablespoons butter (softened)
  • 2 tablespoons white miso paste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 teaspoon fresh parsley (minced)

    Directions

    1. Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
    2. In small bowl, combine all ingredients with a fork. Set aside until ready to use.
    3. Brush cut side of romaine lightly with olive oil. Grill, cut-side down on preheated Grill for 3-5 minutes, until edges are charred and romaine is crisp-tender.
    4. Remove from Grill with tongs and arrange on serving platter. Drizzle with Miso Butter, sprinkle with peanuts and dust with fresh lemon zest.
