  • 1/3 cup cashews (toasted)
  • 4 ounces frozen peas
  • 1 teaspoon fresh ginger (grated)
  • 2 teaspoons lime juice
  • 1 1/4 cups cilantro leaves (fresh)
  • 4 pork cutlets (fat trimmed)

Directions

  1. Place cashews in a food processor and pulse to fine grounds. Add peas, ginger, lime juice, cilantro and 1/4 cup water. Process until smooth and season to taste.
  2. Lightly spray a large frying pan with cooking oil and cook pork for 8 mins over high heat, turning halfway, or until cooked to your liking. Serve topped with pea chutney.
