- 4 pork chops (thin)
- 2 cups watercress
- 1/2 endive
- 2 tablespoons cashew nuts
- salt
- 1 tablespoon dijon mustard
- 5 tablespoons olive oil
- 1 teaspoon oregano
- 1 lime zest
- 3 teaspoons chives (chopped)
- 2 buns (brown bread)
Directions
- In a bowl, place the watercress and endive cut into thin slices. Season with salt, and add the cashews last.
- For the sauce, whisk the mustard in a bowl, and add the olive oil little by little stirring constantly until the sauce gets creamy. Season with ground oregano and salt. Add lime zest, and finally the chives.
- Serve on top of grilled pork chops with coarse salt, and two warm brown bread buns.

This was an excellent meal. My husband asked me, “Where is the meat?” Then he enjoyed eating down to it! The only addition I made was to offer a bowl of mixed berries to bring in a naturally sweet component.
