Description

This recipe requires only 4 ingredients and 30 minutes to pull together. It is sweet and savory, so you can enjoy this as a snack, breakfast, or dessert depending on your tastes and occasion. The peaches are grilled, giving them a nice little caramelized taste the accents the sweetness of the fruit perfectly. A balsamic vinegar reduction is drizzled over the grilled peaches before they are topped with blue cheese and accented with rosemary.

Ingredients

  • 2 peaches
  • 1 rosemary (small bunch)
  • 1/2 cup balsamic vinegar
  • 0blue cheese (small portion)

Directions

  1. 1Heat up a grill (preferably stove top Le Creuset grill)
  2. 2Once the grill is hot enough, pour some cooking oil ontop.
  3. 3Grill the peaches cut in half (with the seeds taken out), 4 minutes on each side.
  4. 4While the peaches are being grilled, pour the vinegar into a small pot and let it boil until its volume reduces by 1/3
  5. 5Serve the peaches and pour the vinegar on top of each one. Place 3-4 small pieces of bleu cheese on top of each peach.
