Description

This recipe requires only 4 ingredients and 30 minutes to pull together. It is sweet and savory, so you can enjoy this as a snack, breakfast, or dessert depending on your tastes and occasion. The peaches are grilled, giving them a nice little caramelized taste the accents the sweetness of the fruit perfectly. A balsamic vinegar reduction is drizzled over the grilled peaches before they are topped with blue cheese and accented with rosemary.

Ingredients

2 peaches
1 rosemary (small bunch)
1/2 cup balsamic vinegar
0blue cheese (small portion)

Directions

1Heat up a grill (preferably stove top Le Creuset grill)
2Once the grill is hot enough, pour some cooking oil ontop.
3Grill the peaches cut in half (with the seeds taken out), 4 minutes on each side.
4While the peaches are being grilled, pour the vinegar into a small pot and let it boil until its volume reduces by 1/3
5Serve the peaches and pour the vinegar on top of each one. Place 3-4 small pieces of bleu cheese on top of each peach.
