Ingredients

  • 1 tentacles (kilo cooked octopus)
  • salt
  • olive oil
  • parsley
  • black pepper
  • 2 large egg yolks
  • 5 cloves garlic (chopped)
  • 2 tablespoons red pepper (chopped)
  • 1/2 lemon
  • 1 tablespoon paprika
  • 1 teaspoon dijon mustard
  • 1 teaspoon tomato puree
  • 1 pinch chili powder
  • 450 milliliters olive oil
  • salt

Directions

  1. In a food blender, add the egg yolks, garlic, red pepper, lemon juice, mustard, tomato puree, paprika, and chili powder and mix.
  2. Add a tablespoon of oil with the blender on.
  3. When the oil is thoroughly mixed in, gradually add the remaining oil, a little at a time. Season to taste.
  4. Place a little oil on a griddle and heat up.
  5. When sufficiently hot, place the octopus on the griddle and cook on medium heat for 4 minutes on each side.
  6. Season and drizzle with oil.
  7. Sprinkle the parsley over the octopus.
  8. Serve with salad and boiled new potatoes in their skins.

This dish can be presented on skewers. Cut the vegetables into larger pieces, instead of small ones, and alternate octopus with vegetables all across the skewer. Arrange them on a large platter to serve. Save some of the sauce to serve on the side for dipping.
