Pungent and piquant with a double mustard and pepper coating, this grilled roast is sophisticated simplicity. Grill potato wedges to serve alongside, and add Sliced Tomatoes Vinaigrette. Serve leftover roast sandwiches on rye bread with Swiss cheese and applesauce on the side.
- 3 pounds pork loin roast (boneless)
- 4 tablespoons dijon (style mustard)
- 1 tablespoon pepper
- 4 tablespoons mustard seed
- Spread mustard over pork roast and sprinkle with pepper. Place mustard seed in a shallow pan; roll roast in seed to coat evenly. Grill over indirect heat in a covered grill about 45 minutes-1 hour (about 15-20 minutes per pound) until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 10-minute rest time.
