Consider this recipe as an idea more than a blueprint for preparing mushroom caps, and other tender vegetables such as eggplant and zucchini (cut into thick slices). Chopped fresh parsley and minced garlic cloves are excellent flavor boosters, along with a drizzle of extra-virgin olive oil if desired. The mushrooms can be broiled or grilled and then served as is or with a sprinkling of coarse salt or sea salt.

Ingredients

  • 1 mushroom cap
  • 1 garlic clove
  • fresh parsley
  • sea salt

Directions

  1. Sprinkle the mushroom with the garlic and parsley.
  2. Grill or saute on high heat turning multiple times. Season with sea salt to taste.

I really like this way of cooking mushroom caps. The garlic, parsley, and the addition of sea salt are great flavoring and really all you need to make these taste great. Grilling them gives them an extra burst of flavor, but sauteing tastes great too.
