This was an amazing recipe! The salmon and coconut rice paired beautifully together. Adding the mango salad took it to another level. Overall a very enjoyable meal to prepare and cook.

This recipe is awesome! Made a couple changes because that’s what I had on hand. Used Vidalia onion not red, Ataulfo mango and white basmati rice. I’d make again and follow the recipe exactly next time. And there will be a next time!! My husband felt it had a slightly strong lime flavor and I felt the cilantro was noticeable. That won’t stop us from eating it again!! 😋❤️

Great dish! Enjoyed how the deferent flavors blend together. Swapped the red onion with a little finely chopped Jalapeños. Also marinated the salmon for a few hours opposed to a short time as the recipe implies (simply because of timing). Will definitely make again.

Marinade was perfect Didn’t grill but oven roasted (425 F for 20 mins) it after a pan seared (5 mins) Served with coconut and ginger rice Easy Sunday evening dinner

Didn't find it all too thrilling. Possibly lay in my mango not being super flavourful (although ripe), but all in all (the marinade, the cooked salmon etc) were all just a bit lacking for me. Would potentially add fresh chilli, more acidity and spring onion instead of red onions if I were to make this again.

I did it today for lunch and I even had some left overs for dinner. I dont like avocados, so I just used corn instead, still it was totally delicious. I will do it again no matter what. Easy to make, great for digestion, I did not cook the rice in "coconut" but I used coconut oil for salsa. Very tasty and yummy :)

it was delicios! we forgot the Bell peppers. we will have to make it again. We also baked the salmon. Next time we will grill it. The recipie was easy to follow.

I loved the flavor the lime marinade gave the salmon. Salsa was awesome, too! I wonder if the coconut rice could be made a day ahead to save some time.

Excellent. Rice was just perfect, just a hint of sweetness. The Coconut water had a bit of pineapple in it and it turned out great. The salsa was also a do-over. Loved it!

Very delicious and tasty. Easy to make. The chopping took much longer than planned. Didn’t have a grill, so baked the salmon in the oven instead. Still yummy.

I substituted tomatoes for mango and the salsa was fantastic but it didn’t suit the salmon or coconut rice. Will try without substitutions as all the flavours were good but I think it needed the mango to meld.

It was delicious, I added cayenne to give it some spice. While on the grill I used apple wood chips to create a smokey flavor. For the salsa I added some black beans for more body and protein.
