Description

Topped with beautifully seasoned sauteed asparagus, these Grilled Lamb Chops make a great dinner entree for a week night. Ready in just 20 minutes, the lamb chops are grilled with a pinch of salt and pepper while the asparagus is lightly sauteed in a mustard and herb butter sauce. You can keep the asparagus stalks whole or chop them up according to your preference. Serve the asparagus atop the lamb chops and alongside a side of fluffy rice.

Ingredients

  • 2 servings
  • 6 lamb cutlet
  • 10 asparagus (stalks, chopped)
  • lemon
  • garlic
  • 2 tablespoons poultry seasoning
  • 2 tablespoons water
  • 1/2 tablespoon mustard (L'Ancienne, or similar)
  • salt (to taste)
  • pepper (to taste)
  • chives (to taste)

Directions

  1. 1Grill the chops with a pinch of salt and pepper.
  2. 2In a pan, heat the margarine 1 minute, add the asparagus, and saute.
  3. 3Add the water and mustard.
  4. 4Season with salt, pepper, and sprinkle with chives. Remove from heat.
  5. 5Serve with white rice.
