- 3 avocados (halved, pit removed)
- 1/2 red onion (medium size, cut into 1/4” rings)
- 1/2 jalapeno (cut in half lengthwise, seeds and ribs removed for milder)
- 1/2 tsp. kosher salt
- 1 lime (juiced)
- 2 Tbsp. cilantro (rough chopped)
- 3 strips cooked bacon (chopped)
- 4 oz. pork rinds
- 1 Tbsp. chives (thinly minced; optional)
- 2 Tbsp. crumbled cheese (blue, goat, cotija; optional)
- 1 Tbsp. avocado oil (optional)

Directions
- Pre-heat grill for 10 minutes on medium-high heat.
- Place all ingredients on the grill, avocados cut side down with skin on, and let char for 8 minutes.
- Remove all ingredients and let cool.
- Scoop avocados into the bowl and mash lightly, leaving some chunks. Add remaining ingredients, reserving some bacon to sprinkle on top. Gently fold together until well mixed.
