  • 3 avocados (halved, pit removed)
  • 1/2 red onion (medium size, cut into 1/4” rings)
  • 1/2 jalapeno (cut in half lengthwise, seeds and ribs removed for milder)
  • 1/2 teaspoon kosher salt
  • 1 lime (juiced)
  • 2 tablespoons cilantro (rough chopped)
  • 3 strips cooked bacon (chopped)
  • 4 ounces pork rinds
  • 1 tablespoon chives (thinly minced; optional)
  • 2 tablespoons crumbled cheese (blue, goat, cotija; optional)
  • 1 tablespoon avocado oil (optional)

    Directions

    1. Pre-heat grill for 10 minutes on medium-high heat.
    2. Place all ingredients on the grill, avocados cut side down with skin on, and let char for 8 minutes.
    3. Remove all ingredients and let cool.
    4. Scoop avocados into the bowl and mash lightly, leaving some chunks. Add remaining ingredients, reserving some bacon to sprinkle on top. Gently fold together until well mixed.
