Ingredients

  • 1/3 cup canola oil
  • 1/4 cup dry sherry (or sweet)
  • 3 cloves garlic (minced)
  • 2 teaspoons fresh ginger (grated)
  • 2 bay leaves (optional)
  • 3 1/4 pounds shrimp
  • cilantro leaves (fresh, to serve)

Directions

  1. Combine oil, sherry, garlic, ginger and bay leaves, if using, in a bowl. Add shrimp and toss to coat. Cover and chill for 1-2 hours to marinate.
  2. Preheat broiler. Cook shrimp for 3-4 mins per side, brushing frequently with marinade, until opaque and cooked through. Transfer to a serving platter and sprinkle with cilantro to serve.
