Description

There's nothing complicated about this satisfying vegetarian dish — it consists of grilled eggplant slices that are plated with minced onions, olives and cherry tomatoes, along with a whirl of olive oil and sprinkle of salt. In the end, the ingredients are left to shine. Feel free to prepare it ahead of time and place it in the refrigerator, covered, to let the flavors mingle.

Ingredients

  • 2 eggplant (sliced)
  • 1/2 red onion (peeled and minced)
  • extra-virgin olive oil
  • olives
  • 1 tablespoon cherry tomatoes
  • salt

Directions

  1. 1Grill or broil the eggplant for a few minutes on each side.
  2. 2Cut the eggplant into strips and season with onion, tomato and olive paste, a few drops of oil and a pinch of salt
  3. 3Serve warm on toasted bread.
