Ingredients

  • 1 cup fresh vegetables ( chopped, zucchini, eggplant, peppers, onions, etc.)
  • 1 teaspoon vegetable oil
  • 1/4 cup pasta sauce (or pizza)
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt ( each, and pepper)
  • 1 pizza crust ( 12”, 30 cm pre cooked, with 1/2”, 1 cm high edges)
  • 1/2 cup eggs ( Naturegg Omega Plus cracked, or Egg Creations Fat Free Original, well shaken)
  • 1/4 cup grated parmesan cheese

Directions

  1. In skillet , heat oil over medium-high heat. Sauté vegetables 3 minutes. Remove from heat, stir in pizza sauce, vinegar, salt and pepper. Spread over pizza crust.
  2. Pour liquid eggs evenly over top.
  3. Place pizza directly on oven rack and bake in preheated 400°F (200°C) oven 12-15 minutes or until eggs are set. Sprinkle cheese over top.To cook on the barbecue: Place pizza directly in the middle of the BBQ rack for a summertime treat!
