Description

When grilling fish and seafood, it is important not to overwhelm the flavor of the meat itself, as it is light and delicate and boasts its own flavor that should be complemented, not overpowered. This Grilled Cuttlefish is served with a homemade garlic parsley pesto that can be stored for up to two weeks as a sauce or dressing for other dishes. Serve the pesto drizzled cuttlefish with a wedge of lemon to squeeze over.

Ingredients

2 servings
800 grams cuttlefish (fresh)
salt
mustard seeds (to taste)
pepper (to taste)
1 bunch parsley
1 garlic cloves
150 milliliters olive oil
1 lemon juice

Directions

1Clean, wash, and dry cuttlefish. Season with salt, pepper, and mustard seeds.
2Cut the fish open, and grill opened.
3While the cuttlefish grills, place the parsley and garlic in a blender or food processor, and chop finely.
4Open the food processor bowl, and use a spatula to scrape the sides. Add the olive oil, and mix until obtaining a liquid type nectar.
5Store the olive oil mixture in a jar, and use for seasoning, or salads, in the upcoming weeks.
6Remove the fish from the grill, cut it into coarse pieces, sprinkle with parsley and olive oil mixture, and sprinkle lemon juice on top.
