Grilled with a little salt and pepper for flavor, the cuttlefish are then covered in a vinegar sauce boasting the flavors of garlic, shallots, red pepper, and chives.   • 2 servings
  • 2 cuttlefish (without ink)
  • 1 garlic clove (chopped)
  • 1 shallot (chopped)
  • 1/4 red pepper (chopped)
  • 2 tablespoons olive oil
  • salt
  • ground black pepper
  • 10 chives (branches small)
  • 2 teaspoons balsamic vinegar


  1. Clean the cuttlefish, and remove the ink sac. Cut the fish in half, and grill with just a little bit of salt and pepper.
  2. To prepare the sauce, mix the garlic, shallot, red pepper, and olive oil. Season with a little bit of salt and pepper, add the chives, and finally the vinegar: Mix well.
  3. Serve with green beans seasoned with a drizzle of olive oil, 2 thyme sprigs, 1 chopped garlic clove, and an arugula salad with pumpkin seeds.

The cloves, shallots, chives and vinegar really gave a blast of great flavor to this dish. I even doubled the cloves! I served the fish with a side of wilted salad greens.
