  • 1 avocado (seeded, peeled and mashed)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup sweet chili sauce
  • 2 tablespoons shredded basil
  • 1 tablespoon chopped cilantro
  • 4 boneless skinless chicken breasts
  • 2 teaspoons olive oil
  • crusty bread
  • mixed salad

Directions

  1. Heat a grill pan on medium-high heat or preheat the grill to medium. Combine avocado, mayonnaise, sour cream, sweet chili sauce, basil and cilantro in a medium bowl Mix until smooth.
  2. Brush chicken with olive oil and season with salt and pepper. Grill 5-6 mins each side, until cooked through.
  3. Slice chicken and serve with avocado mayonnaise, salad and crusty bread.
