This recipe was so well written I found it really easy to follow exactly, without having to guess what to do. The only thing I have changed it to use all fresh herbs and I usually add a little fresh sage as well. I have made this in my oven as well when I had to change my plans due to bad weather, it came out really well and I served it as part of a roast dinner with potatoes, gravy and vegetables, although cooking it outside is quicker and really adds to the flavor. As I normally do with dishes like this I like to prepare the meat in advance and store it covered in the fridge overnight, this enhances the flavor and also helps me to remain organised and prepare other dishes if I have guests coming over. When I make this I like to spend the extra on a really good organic cut of beef as I think it tastes so much better.
