Perfectly delicious and messy ribs combining the smokey flavor of Fire & Flavor's John Wayne BBQ rub and the natural goodness of your favorite ribs.

Ingredients

  • 4 tablespoons bbq seasoning (John Wayne)
  • 2 teaspoons kosher salt
  • 5 pounds beef short ribs (bone-in, trimmed)
  • 2 tablespoons apple cider vinegar
  • 1/2 cup apple cider vinegar
  • 1/2 cup dijon mustard
  • 1/4 cup brown sugar

Directions

  1. Preheat oven to 300°F. Combine BBQ Seasoning and salt, reserving 1 teaspoon for glaze. Rub remaining seasoning on ribs and arrange, bone side down, in a large, glass baking dish (place thinner ribs in center of dish). Sprinkle vinegar over ribs, cover with foil, and bake until internal temperature of ribs reaches 170°F on a meat thermometer, about 1 ½ hours.
  2. While ribs are roasting, combine remaining 1 teaspoon seasoning, ½ cup vinegar, and brown sugar in a medium bowl and set aside. Preheat gas or charcoal grill to low heat or 300°F.
  3. Place ribs on grill, bone-side down, brush with ¼ cup glaze and cook until internal temperature registers 195°F (about 1 ½ – 2 hours). Brush ribs with glaze every 30 minutes while cooking. Remove ribs from grill, tent loosely with foil, and allow to rest for 10 minutes before serving.
