Green pepper, Grilled Tomato, Chicken, and Cheddar Mini Pizzas

Description

This is a simple to make dish that is filled with flavor. Even though is it a mini pizza it has a lot of colors and fragrance. The taste of the vegetables are savory, while the chicken adds a great texture. This is great for an appetizer, or even a great side to a main dish.

Ingredients

olive oil
1 tomatoes
salt
ground black pepper
1 shallots
1 green bell pepper
1 clove garlic
1 tablespoon sugar
pizza doughs
2 chicken cutlets
white cheddar cheese

Directions

1Preheat the oven to 180 degrees Celsius.
2Place the tomato slices on a parchment paper-lined baking sheet. drizzle oil on both sides of the tomato slices, along with a pinch of salt and black pepper.
3Broil for for 5 minutes on each side. Watch closely so that the slices do not burn.
4Add a tablespoon of oil to a skillet on medium heat. Add the shallot, bell pepper, and garlic and saute for 5 minutes.
5Add the vegetables to a food process with the sugar. Puree until smooth and set aside. Set aside.
6Roll out 40 gram dough balls to make thin mini pizzas
7Cover the dough with the bell pepper sauce. Place the tomato sliced on top.
8Top with chicken and cheese.
9Raise the oven temperature to 200 C and bake for 15 minutes until the crust is golden. Serve hot.
