This is a simple to make dish that is filled with flavor. Even though is it a mini pizza it has a lot of colors and fragrance. The taste of the vegetables are savory, while the chicken adds a great texture. This is great for an appetizer, or even a great side to a main dish.

Ingredients

  • olive oil
  • 1 tomato
  • salt
  • ground black pepper
  • 1 shallot
  • 1 green bell pepper
  • 1 clove garlic
  • 1 tablespoon sugar
  • pizza dough
  • 2 chicken cutlets
  • white cheddar cheese

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Place the tomato slices on a parchment paper-lined baking sheet. drizzle oil on both sides of the tomato slices, along with a pinch of salt and black pepper.
  3. Broil for for 5 minutes on each side. Watch closely so that the slices do not burn.
  4. Add a tablespoon of oil to a skillet on medium heat. Add the shallot, bell pepper, and garlic and saute for 5 minutes.
  5. Add the vegetables to a food process with the sugar. Puree until smooth and set aside. Set aside.
  6. Roll out 40 gram dough balls to make thin mini pizzas
  7. Cover the dough with the bell pepper sauce. Place the tomato sliced on top.
  8. Top with chicken and cheese.
  9. Raise the oven temperature to 200 C and bake for 15 minutes until the crust is golden. Serve hot.

Relatively simple to make and full of flavor! This is a great way to change up boring mini pizzas. We really loved the taste of the veggies with the chicken. Quick meal or can be made as great little appetizers.
