Four ingredients and 20 minutes is all that stands between you and this delicious green olive tapenade. The olives are paired with salty anchovies, briny capers, and bold garlic for a dish that is bursting with flavor. Try this as a dip with crackers or sliced vegetables, a spread on a sandwich, or add a spoonful to a salad for an extra kick.

Ingredients

  • 500 grams pitted green olives
  • 8 anchovy fillets (in oil)
  • 6 teaspoons capers
  • 1 garlic clove

Directions

  1. Shred the olives (several times) and the remaining ingredients in a food processor fitted with the blade. Mix more or less fine according to your taste. If the tapenade seems a little bit dry, add a little bit of olive oil at the end. Mix well. Serve with bread sticks or toasted baguette slices. Will keep in the refrigerator in an airtight container for a few days.

This was simple to make and delicious. We have been finding more and more uses for it - in sandwiches, on roasted vegetables, even stirred into scrambled eggs. It is such a great thing to have on hand.
