Try this perfectly seasoned Green Rice the next time you want to make a dinner inspired by the flavors of Mexico. Seasoned with roasted poblano peppers, fresh coriander and parsley, and sauteed onion, this Green Rice is fluffy and full of savory flavor. Serve as a side whenever you make tacos, enchiladas, or tamales or add it into your burritos.

Ingredients

  • 1/2 onions (chopped)
  • vegetable oil
  • 1 cup rice
  • 1 clove garlic
  • 1/2 cup coriander (chopped)
  • 1/2 cup parsley (chopped)
  • 2 poblano peppers (roasted, peeled, and deveined)
  • 2 cups chicken broth
  • salt

Directions

  1. In a saucepan, saute the onion.
  2. Add the rice. Cook until it becomes transparent. Set aside.
  3. In a blender, add the garlic, coriander, parsley, and poblano chilies. Add chicken broth as needed. Strain.
  4. Add to the rice, and also add the rest of the chicken broth.
  5. Season as needed. Cover and cook over low heat until the water has been absorbed.
  6. Garnish with coriander and serve.
