  • 3 1/4 pounds papayas (green, unripe, peeled, seeded and coarsely chopped)
  • 2 onions (medium, coarsely chopped)
  • 4 cloves garlic (finely chopped)
  • 3/4 inch fresh ginger (grated)
  • 3 red chili peppers (fresh long, thinly sliced)
  • 1 cup raisins
  • 4 tomatoes (medium ripe, 1 1/4 lbs, peeled and coarsely chopped)
  • 2 cups white vinegar
  • 1 teaspoon cooking salt (coarse)
  • 1 teaspoon ground allspice
  • 1 1/2 cups raw cane sugar

    Directions

    1. Combine papaya, onion, garlic, ginger, chili peppers raisins, tomatoes, vinegar, salt and allspice in large saucepan on high heat; bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for 30 mins, or until papaya is tender.
    2. Add sugar; stir on high heat, without boiling, until sugar has dissolved. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for 1 hour, or until relish is thick.
    3. Spoon hot relish into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place. Once opened, store in the refrigerator. Good served with grilled shrimp.
