- 1 egg (hardboiled, peeled and chopped)
- 1 can pitted olives (rinsed)
- parsley (or coriander to taste)
- oregano (to taste)
- 1 teaspoon mayonnaise
- In a glass bowl, combine the olives, egg and parsley and mash together.
- Season with oregano and add mayonnaise if desired. Chill until ready to serve.
