Ingredients

  • 1 prepared pizza crust (x 12 inch)
  • 1 1/4 ounces pimento stuffed green olives
  • 2 anchovy fillets (chopped, drained)
  • 2 teaspoons capers (drained)
  • 2 tablespoons flat leaf parsley (chopped)
  • 1/2 teaspoon grated lemon zest (finely)
  • 2 teaspoons vegetable oil
  • 2 1/2 ounces chicken meat (cooked, shredded)
  • 1/2 red pepper (roasted, chopped)
  • 2 3/4 ounces monterey jack cheese (grated)
  • salad (to serve)

Directions

  1. Preheat oven to 450°F. Place pizza crust on a baking sheet and bake for 5 mins.
  2. Meanwhile, put olives, anchovy, capers, parsley and lemon zest in a food processor. Process until finely chopped. Add oil; process until well combined.
  3. Spread mixture over pizza base. Top with chicken, chopped pepper and cheese. Bake for 12-15 mins or until golden brown. Serve with salad.
